Arugula and Watermelon Salad

An interesting mixture of rocket salad, watermelon, and feta cheese creates one nice summer dish! i prefer sauteeing and caramelizing the onions for a sweeter salad.


Ingredients

Arugula, two packages of 5 ounces
12 of a large watermelon, diced and seeded
Sliced red onion, one
1 cup of feta cheese in crumbles
Balsamic vinaigrette, 1 1/2 cups

Directions

Step 1
In a sizable bowl, combine the arugula, watermelon, red onion, and feta cheese with the balsamic vinaigrette. Offer chilled.
